Culinary Schools - Culinary schools teach you the skills of a master chef through actual practice. Le Cordon Bleu schools train you in the supervisory and management skills to become a master chef. They also include training for menu planning, portion sizing, food purchasing and cost control, food storage, and how to best use leftover food to minimize waste. Some courses include baking, basic cooking, nutrition, food service operations, catering operations, hospitality marketing, etc. Culinary schools also teach food safety, sanitation and public health rules.

J.C.C.C. Chef Apprenticeship Program - As the public's interest in food continues to grow, so does the demand for trained chefs. The chef apprenticeship program at JCCC is sponsored by the American Culinary Federation, the Greater Kansas City Chefs Association and the U.S. Department of Labor. The three-year program consists of 6,000 hours of training under an American Culinary Federation chef member as well as formal course work. It is the first program in the United States to receive American Culinary Federation Educational Institute accreditation. The JCCC chef apprenticeship program features a heavy emphasis on food preparation. Courses include basic, intermediate and advanced food preparation; baking; and garde-manger (cold-food preparation). Students also receive a solid background in management, with courses in supervisory management, hospitality accounting, menu planning, purchasing, beverage control and advanced hospitality management. Seattle Community College of Hospitality and Culinary Arts - Training tomorrow's executive chefs - with an emphasis on international cuisine. This six-quarter, ACF-accredited program includes the unique "Chef-of-the-Day" course... The Culinary Arts program is a six quarter (certificate) or seven quarter (AAS degree) course of study. The curriculum builds on classical techniques by integrating the modern cooking styles and methods of a variety of international cuisines, as well as seasonal northwest cooking. Students will learn to prepare appetizers, soups, sauces, salads, entrees, vegetables and starches, breads, pastries and desserts. They will also learn to identify and fabricate meat, poultry and fish. In addition to cooking and pastry techniques, the program covers sanitation, nutrition, management, purchasing, costing, menu development, and food and wine pairing. As a final project, each student runs one of the two restaurants as "Chef of the Day", where they implement their own menu and run the restaurant for the day. For this project, students plan the menu, develop and cost all recipes, order their products, assign work stations, book reservations, and reconcile the day's sales. Students are graded in their ability to plan and run the operation effectively and work within food cost guidelines.
